The Women’s Health test kitchen turned a basic deli sandwich into the ultimate plant-based lunch with just two cans of protein-packed chickpeas.
What you need
- Chickpea Salad Sandwich
- In a large bowl, whisk together lemon juice, mayonnaise, soy sauce, and nutritional yeast. Add chickpeas and mash, leaving some larger chunks. Fold in celery, spring onion, gherkins, and parsley.
- Assemble sandwiches with bread, lettuce, chickpea mixture, cucumber, and sprouts.
