Boozy Watermelon Lime Granita
Sweet, juicy watermelons are one of the best things in summer. I love eating watermelon alone, but it's also an excellent base for a fruity drink. This Boozy Watermelon Lime Granita is part cocktail and part dessert – a refreshing way to cool off in the hot summer. This watermelon ice cream dessert consists of only four ingredients – watermelon, lime, rum and sugar – and is like an adult slushie. What is a granita made of?
A granita is an Italian dessert that originally comes from Sicily and resembles a slushie. Granitas consist of sugar, are liquid and flavored with fruits. They can be eaten with a spoon or drunk through a straw. Granitas have a coarser, icy texture than sorbet.
How to make a granita
Granitas do not have to contain alcohol. To prepare this watermelon granita recipe, first put the watermelon, lime juice, rum and sugar in a blender and process until smooth. Pour the puree into a 9 "x 9" metal baking pan and freeze it for about 1 1/2 hours.
Use a fork to scrape the mixture around. Put the pan back in the freezer and freeze it until it is firm for almost 1 to 2 hours. Scrape the granita again with a fork to form chunky snow-like ice crystals. Freeze and repeat about every hour until the entire mixture is frozen and shaved. Serve in martini glasses and garnish with watermelon wedges and mint.
Variations:
- Add tequila or vodka to the rum.
- You can change the taste of the granita by replacing the watermelon with another fruit. Strawberry and lemon are other popular granita flavors.
- To prepare an alcohol-free granita, leave out the alcohol!

- 4 1/2 cups diced seedless watermelon
- 1 lime, juiced
- 2/3 Cup white rum
- 2nd tablespoon sugar
- 6 small wedges of watermelon, for garnish
- Mint leaves, for garnish

Put the watermelon, lime juice, rum and sugar in a blender and stir until smooth, then put the puree in a 9 x 9 metal baking pan.

Freeze for about 1 1/2 hours, then scrape well with a fork to mix everything.

Put the pan back in the freezer and freeze it for about 1 to 2 hours until it is almost firm. Use a fork to scrape the granita to form chunky, snow-like ice crystals.

Freeze and repeat scraping occasionally until the entire mixture is frozen and shaved.

Serve in martini glasses and garnish with watermelon wedges and mint.
